Cooking Across the Hall: Chicken Rollatini
On this episode of Cooking Across the Hall, master chef Russ Gleason from Market Place Fresh Foods La Grande shows us how to cook another one of his original recipes, the Chicken Rollatini! This recipe includes three parts: the potatoes, the Chicken Rollatini, and the sauce, which all comes together for one delectable meal! This episode was brought to you by Rock & Sons Tire and Auto Repair Recipe Potatoes: In a bowl mix: -2 or 3 Golden potatoes with top and bottom chopped off -Olive Oil -Pinch of Minced Garlic -Pinch of Smoked Paprika -Pinch of Pepper -Pinch of Salt -Pinch of Parsley -Put ingredents on skillet and cook shortly for a brown color -Put in oven for 25 minutes at 350 degrees Chicken Rollatini: -Take 7 oz Chicken Breast, butterfly it and spread it out -Take two pieces of Plastic Wrap and put one on the top and the other on the bottom of the chicken breast -Take a Meat Mallet or other heavy object and beat til thin -Take the flattened Chicken Breast out of the plastic wrap and place 3 oz of Parma Ham and 2 oz of Smoked Mozeralla on the Chicken Breast -Add a pinch of Salt, Pepper, and Parsley -Place pieces of Asparagus on Chicken, with two pieces sticking out on both sides -Roll Chicken Breast and other ingredients together -Stick together with toothpick, now you have the Rollatini -Fill a bowl with 1/2 a cup of Whole Purpose Flour, season with pinch of Salt and Pepper -Dredge Chicken Rollatini with seasoned flour -Add Olive Oil to frying pan and briefly cook Chicken Rollatini til all sides have slight brown color -Put Chicken Rollatini in oven for 20 minutes at 350 degrees Sauce: In a frying pan add: -1 oz Butter -1/2 oz of Shallots (or diced red or green onions) -3 oz of Mushrooms -Pinch of Salt and Pepper -1/2 oz of Garlic Cook til shallots and garlic get a little brown, then add: -1 oz of Cream Sherry -4 oz of Heavy Whipping Cream -2 oz of Marinara or Tomato Sauce -Pinch of Parsley -Cook at a rolling boil til the sauce becomes creamy or to desired thickness Take potatoes and Chicken Rollatini out of oven, place potatoes on plate and remove toothpick from Rollatini then place on top of potatoes, add sauce and enjoy!
